  • 8.8 oz (250g) Fresh Buffalo Burrata
  • 7 oz (200g) Thick-Cut Speck
  • 3.5 oz (100g) Fresh Spinach
  • Butter, Salt, Pepper, Extra Virgin Olive Oil

Burrata Cream:

  1. Blend burrata until smooth, adding cooking cream or cold water for consistency if needed.

Speck Preparation:

  1. Slice speck into strips and toast in the oven at 350°F for 5-6 minutes. Drain on paper towels.
  2. Toss spinach with olive oil and salt.

Final Preparation:

  1. Boil salted water and cook pasta for 2-3 minutes.
  2. Toss pasta with butter and cooking water.
  3. Plate with a layer of burrata cream, nest the pasta, and garnish with crispy speck and spinach.
