Truffle Tagliatelle, Sea Bass,Broccoli & Anchovies

Savor a harmonious blend of land and sea! This recipe combines TRFL truffle pasta with crispy sea bass, creamy broccoli, and rich anchovy sauce for a refined dining experience.

Ingredients:

  • 8.8 oz (250g) Truffle Pasta
  • 3 Fresh Sea Bass Fillets
  • 1 Broccoli
  • 5.3 oz (150g) Anchovies in Oil
  • 1 cup (250ml) Cooking Cream
  • 1 Garlic Clove
  • Butter, Olive Oil, Sugar, Salt, Pepper to taste

Cooking Time:

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes

Broccoli Cream:

  1. Boil broccoli in salted water for 7-8 minutes.
  2. Sauté garlic in olive oil, then blend with cooked broccoli until smooth. Keep warm.

Anchovy Cream:

  1. Melt butter in a pan and add drained anchovies, cooking until dissolved.
  2. Stir in cooking cream and simmer on low heat for 30 minutes. Blend and strain.

Final Preparation:

  1. Sear sea bass in oil until crispy on both sides. Season with salt and pepper.
  2. Boil salted water and cook pasta for 2-3 minutes. Toss with butter and a little cooking water.
  3. Plate with broccoli and anchovy creams, add pasta, and top with sea bass.
